For the Burger Patties:
- 1 lb ground beef (80/20 blend for juiciness)
- ½ tsp salt
- ½ tsp black pepper
- ½ tsp smoked paprika
- ½ tsp garlic powder
- ½ tsp onion powder
- 1 tbsp Worcestershire sauce
For the Toppings:
- 4 slices cheddar cheese
- 4 brioche burger buns (toasted)
- 4 slices crispy beef bacon
- ½ cup barbecue sauce (smoky or sweet)
- 1 small red onion (sliced)
- ½ cup pickles (optional)
For the Onion Rings:
- 1 large onion (sliced into rings)
- ½ cup all-purpose flour
- ½ cup buttermilk
- ½ cup breadcrumbs
- ½ tsp salt
- ½ tsp smoked paprika
- Oil for frying
Instructions
Step 1: Making the Onion Rings
- Heat oil in a deep pan to 350°F (175°C).
- Dip each onion ring into the flour, then into the buttermilk, and finally coat it with breadcrumbs.
- Fry the onion rings until golden brown, about 2-3 minutes per side.
- Remove from oil and place on a paper towel to drain excess oil.
Step 2: Preparing the Burger Patties
- In a bowl, combine ground beef with salt, black pepper, smoked paprika, garlic powder, onion powder, and Worcestershire sauce. Mix gently—don’t overwork the meat.
- Divide the mixture into 4 equal portions and shape into patties slightly larger than the burger buns (they will shrink slightly when cooked).
Step 3: Cooking the Burgers
- Heat a grill or skillet over medium-high heat.
- Cook the patties for 3-4 minutes per side or until desired doneness is reached.
- In the last minute of cooking, place a slice of cheddar cheese on each patty and let it melt.
Step 4: Assembling the Cowboy Burger
- Spread a layer of barbecue sauce on the bottom half of each toasted brioche bun.
- Place the cheesy beef patty on top.
- Add a slice of crispy beef bacon.
- Layer with a few fried onion rings.
- Top with red onion slices and pickles (if using).
- Spread a little more barbecue sauce on the top bun and place it over the burger.
