For the Burger Patties:

  • 1 lb ground beef (80/20 blend for juiciness)
  • ½ tsp salt
  • ½ tsp black pepper
  • ½ tsp smoked paprika
  • ½ tsp garlic powder
  • ½ tsp onion powder
  • 1 tbsp Worcestershire sauce

For the Toppings:

  • 4 slices cheddar cheese
  • 4 brioche burger buns (toasted)
  • 4 slices crispy beef bacon
  • ½ cup barbecue sauce (smoky or sweet)
  • 1 small red onion (sliced)
  • ½ cup pickles (optional)

For the Onion Rings:

  • 1 large onion (sliced into rings)
  • ½ cup all-purpose flour
  • ½ cup buttermilk
  • ½ cup breadcrumbs
  • ½ tsp salt
  • ½ tsp smoked paprika
  • Oil for frying

Instructions

Step 1: Making the Onion Rings

  1. Heat oil in a deep pan to 350°F (175°C).
  2. Dip each onion ring into the flour, then into the buttermilk, and finally coat it with breadcrumbs.
  3. Fry the onion rings until golden brown, about 2-3 minutes per side.
  4. Remove from oil and place on a paper towel to drain excess oil.

Step 2: Preparing the Burger Patties

  1. In a bowl, combine ground beef with salt, black pepper, smoked paprika, garlic powder, onion powder, and Worcestershire sauce. Mix gently—don’t overwork the meat.
  2. Divide the mixture into 4 equal portions and shape into patties slightly larger than the burger buns (they will shrink slightly when cooked).

Step 3: Cooking the Burgers

  1. Heat a grill or skillet over medium-high heat.
  2. Cook the patties for 3-4 minutes per side or until desired doneness is reached.
  3. In the last minute of cooking, place a slice of cheddar cheese on each patty and let it melt.

Step 4: Assembling the Cowboy Burger

  1. Spread a layer of barbecue sauce on the bottom half of each toasted brioche bun.
  2. Place the cheesy beef patty on top.
  3. Add a slice of crispy beef bacon.
  4. Layer with a few fried onion rings.
  5. Top with red onion slices and pickles (if using).
  6. Spread a little more barbecue sauce on the top bun and place it over the burger.

Step 5: Serve and Enjoy!
