  • 4 boneless, skinless chicken breasts or thighs
  • 1 tablespoon oil (avocado or olive oil)
  • Juice of 1 lemon (optional for marinade)

For the Cajun seasoning:

  • 2 teaspoons paprika
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon dried oregano
  • 1 teaspoon dried thyme
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon cayenne pepper (adjust to taste)
  • 1/2 teaspoon salt
  • 1/2 teaspoon ground cumin

Optional garnishes:

  • Fresh parsley, chopped
  • Lemon wedges

Instructions

1. Prepare the Cajun seasoning

  • In a small bowl, mix paprika, garlic powder, onion powder, oregano, thyme, black pepper, cayenne, salt, and cumin.

  • Stir well to combine and set aside.

2. Season the chicken

  • Pat the chicken dry using paper towels.

  • Drizzle oil over the chicken and rub it evenly on both sides.

  • Sprinkle the Cajun seasoning mix generously over each piece.

  • Rub the spices into the meat to coat thoroughly.

3. Optional marination

  • For deeper flavor, let the seasoned chicken rest for 30 minutes to 2 hours in the refrigerator.

  • You can also add lemon juice during this time to tenderize the meat and enhance flavor.

4. Cook the chicken

  • Heat a large skillet or grill pan over medium-high heat.

  • Add a small amount of oil if needed to prevent sticking.

  • Place chicken in the pan and cook for 6-8 minutes per side.

  • Cook until the outside is charred and the internal temperature reaches 165°F (74°C).

5. Rest and serve

  • Transfer the cooked chicken to a plate and let it rest for 5 minutes.

  • Slice or serve whole, garnished with parsley and lemon wedges if desired.
